Not sure where I found this, but here is my favorite banana bread recipe, which now will always remind me of quarantine and home in OC:
- 1 1/2 cups flour
- 1 1/4 tsp baking soda
- 3/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 stick (which I think is 1/4 cup?) unsalted butter, softened to room temp.
- 1 cup brown sugar
- 2 large eggs
- 4 ripe bananas, mashed
- 1 tsp vanilla extract
- 3/4 cup pecans/walnuts
Instructions:
- Preheat oven to 350F/180C. (Grease loaf pan with non-stick spray ← not necessary lol; do this later, not as 1st step)
- Dry ingredients! Flour, baking soda, salt, and cinnamon!
- Wet ingredients! Butter, brown sugar! Beat until smooth and creamy. Add eggs one at a time, and beat in bananas and vanilla.
- Beat dry into wet- do not over-mix. Fold in nuts.
- Bake for an hour-ish (more like 50min?)

edit: makes 2 small loaves which add up to roughly 2720 calories?! holy shit that makes one small loaf 1360 calories…
